The Chef that designed our dishes:

Ion Pérez hails from Guipúzcoa and trained at the Escuela Superior de Hostelería catering college in San Sebastián. He then spent several years working alongside renowned culinary figures in the south of France, and for the past seven years has been in charge of the kitchen at the Basque restaurant Es Pou de San Magí. Ion has used all of his culinary honesty to prepare our tapas menu, creating simple, traditional dishes that are based on natural products and aimed at lovers of real food who appreciate nature’s authentic flavours. His core values of self-sacrifice and respect for culinary traditions are reflected in his maxim, what he calls “the enjoyment of suffering”, in that the greatest satisfaction comes from a job done well.
